Salad:
- 1/2 a head iceberg or romaine lettuce, sliced
- 1 fennel bulb, thinly sliced
- 1 red pepper, thinly sliced
- Fresh dill to your liking, chopped
- 3 green onions - sliced
- Feta cheese/pressed cottage cheese - as much as you like
Salad dressing:
Blend all ingredients:
- Juice of 2-3 lemons
- ¼ cup red wine vinegar
- ½ cup olive oil
- 3 tbsp miso paste
- 1.5 tbsp dried oregano
- 1 tsp salt
- 1 tsp garlic powder
- 4 cloves of garlic, grated/minced
- 3 tbsp nutritional yeast
