Thai Coconut Bone Broth Summer Rolls

Fresh, flavorful, fun. These vibrant bone broth summer rolls are packed with crunchy, nutritious veggies and dipped in a Thai-inspired sauce that’s heavenly. Dunk away -- our creamy Thai coconut bone broth adds protein and even more flavor, richness and nutrition to every yummy bite.
Ingredients:
- rice paper rolls
- cucumber sliced into sticks
- carrots sliced into sticks
- Peppers sliced
- avocado sliced
- mint and basil leaves
- butter lettuce
- 1 packet Thai Coconut bone broth
- Optional: extra protein
For the dipping sauce:
- 2 tbsp peanut butter/almond butter/ tahini
- ½ tbsp maple syrup
- ½ tbsp rice vinegar
- 2 tbsp soy sauce/coconut aminos
- 1 lime juiced
- 1 piece of garlic grated
- 1 packet of Thai coconut instant bone broth
- Optional: sesame seeds
Directions:

Follow the directions on the rice paper rolls package to soften them. Place 2 on a plate.

Fill rolls with your ingredients and wrap up.

For the sauce, mix all of the “sauce ingredients” in a bowl.
