Thai Coconut Bone Broth Summer Rolls

Ingredients:

  • rice paper rolls
  • cucumber sliced into sticks 
  • carrots sliced into sticks
  • Peppers sliced
  • avocado sliced
  • mint and basil leaves
  • butter lettuce
  • 1 packet Thai Coconut bone broth
  • Optional: extra protein

For the dipping sauce:

  • 2 tbsp peanut butter/almond butter/ tahini
  • ½ tbsp maple syrup
  • ½ tbsp rice vinegar
  • 2 tbsp soy sauce/coconut aminos
  • 1 lime juiced
  • 1 piece of garlic grated
  • 1 packet of Thai coconut instant bone broth
  • Optional: sesame seeds

Directions:

  1. Follow the directions on the rice paper rolls package to soften them. Place 2 on a plate.
  2. Fill rolls with your ingredients and wrap up.
  3. For the sauce, mix all of the “sauce ingredients” in a bowl.
  4. Dip and enjoy!
