Thai Coconut & Bone Broth Salmon

Recipe

Ingredients:

  • 4 filets of salmon
  • Your preferred oil for sauteing/frying
  • 1 red pepper, chopped
  • 2 bok choy bunches, chopped
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 1 tbsp grated ginger
  • 1 ¾ cups coconut milk
  • 1 packet Thai Coconut bone broth
  • 1.5 cups water
  • 3 tbsp Thai red curry paste
  • 2 tbsp tomato paste
  • 2 tbsp lemon juice
  • Salt and pepper to taste
  • ½ tsp ground coriander
  • ½ tsp ground cumin
  • ½ tsp sweet paprika
  • 1 tsp red pepper flakes
  • basil leaves to garnish
  • steamed Jasmine rice or flatbread for serving

Instructions:

  1. Add oil to a pan and sear your salmon for 3 mins each side, then remove the salmon from the pan.
  2. Add oil and saute onions, garlic, ginger for a few minutes.
  3. Add red pepper, tomato paste, curry, seasonings, and saute until fragrant.
  4. Add bok choy, bone broth packet, water, and coconut milk and bring to a simmer.
  5. Simmer for 10 mins approx.
  6. Serve with rice.
