This fresh, herby salad is a twist on the classic that’s easy to pull together and great for meal prep. Ingredients:
- 2 bunches of parsley
- 1 cucumber chopped
- 1 pint of cherry tomatoes, sliced
- 1 bunch of green onions, chopped
- ¼ cup olive oil
- 1 lemon juiced
- 1 tsp salt
- pepper to taste
- ½ packet Naked instant bone broth
- ½ cup uncooked quinoa (makes about 1 cup) – you can cook more quinoa if you prefer more grains in the salad
How to:
- Cook your quinoa according to package instructions. Let cool.
- Wash and chop parsley, tomatoes, green onions, and cucumber and add them to a bowl.
- In a blender add olive oil, lemon juice, garlic, salt, and instant bone broth.
- Toss and enjoy!
