One of my weekend favourites, a slow cooker pepper beef stew.
The base of this stew starts with browned stewing beef, onions, layers of peppers, tomatoes and bone broth flavours simmered gently. Serve over creamy mashed potatoes, rice or couscous. Such a delicious, simple dinner option to warm the belly.
Ingredients:
- 1-2 lbs stewing beef
- 1 onion, diced
- 2 green peppers and/or red peppers, chopped
- 1 can tomato sauce
- 1 c Bone Brewhouse Traditional bone broth
- ½ tsp dried basil
- ½ tsp dried oregano
Directions:
Brown your beef with your onion in a skillet over medium heat. Drain your beef and onions and place in a 6-quart slow cooker. Add the rest of your ingredients cover and cook on low for 6-8 hours. (I don’t like my pepper too mushy and will add them in the last half hour.)
