Ingredients:
- 1 onion chopped
- 2-3 garlic cloves minced
- 2 pints cherry tomatoes
- 1 packet Homestyle instant bone broth
- 1 cup water (or more to thin)
- 1 tbsp olive oil
- Parmesan (measure with your heart)
- Salt & pepper (to taste)
- 2 cans of rinsed and drained butter beans
- 2 tbsp tomato paste
- Optional parsley/basil for garnish
- Optional: sourdough for dipping
How to:
- Sauté onion and garlic in olive oil.
- Add in your cherry tomatoes and cook until they soften.
- Add in your bone broth powder, water, beans, tomato paste and let simmer.
- Add Parmesan, salt and pepper to taste.
