Rustic Butter Bean Stew

This rustic butter bean stew will transport you back to the old days when food was simple, hearty, and shared generously by a crackling fire. It’s cozy, filling, and packed with protein, fiber, and nutrients — delicious comfort food that’ll keep you nourished and toasty when it's chilly out. 

One-pan, easy to prep, and freezer-friendly. Tip: serve with freshly baked sourdough for the ultimate rustic experience!

Ingredients:

  • 1 onion chopped 
  • 2-3 garlic cloves minced 
  • 2 pints cherry tomatoes 
  • 1 packet Homestyle instant bone broth
  • 1 cup water (or more to thin)
  • 1 tbsp olive oil 
  • Parmesan (measure with your heart)
  • Salt & pepper (to taste)
  • 2 cans of rinsed and drained butter beans
  • 2 tbsp tomato paste 
  • Optional parsley/basil for garnish
  • Optional: sourdough for dipping 

How to: 

  1. Sauté onion and garlic in olive oil.
  2. Add in your cherry tomatoes and cook until they soften.
  3. Add in your bone broth powder, water, beans, tomato paste and let simmer. 
  4. Add Parmesan, salt and pepper to taste. 

Dunk sourdough often and without shame!
