Cozy, comforting, and packed with bone broth protein, this delish soup features lentils rich in protein and fiber, nutritious veggies, and an added boost of protein, nutrients, and zing from our Lemon Ginger bone broth. A hearty, healthy meal to keep you warm, satisfied, and nourished on the chilliest winter days.
Ingredients:
- 2 tbsp olive oil
- 1 onion diced
- 3 garlic cloves chopped
- 2 - 4 large carrots, chopped
- 3 - 5 celery ribs, chopped
- 1.5 cups dried lentils, green or brown
- 28 oz can of diced tomatoes
- 3-4 cups of water (add more if you prefer a thinner soup)
- 2 packets Bone Brewhouse Lemon Ginger instant bone broth
- 1 tsp cumin
- 1 tsp coriander powder
- 2 tsp paprika powder
- 4 dried bay leaves
- Fresh parsley
- Salt to taste
How to:

Chop carrots, celery, onion, garlic, and sauté in olive oil for about 7 mins.

Add the rest of the ingredients except parsley.

Bring to a boil, then simmer on low for about 40 minutes until lentils are cooked.

If you like a smoother, thicker soup, pulse with an immersion blender to the desired consistency.

Top with fresh parsley, and a squeeze of lemon and enjoy!
