Lemon dill bone broth white beans

This refreshing yet hearty and satisfying lemon dill bone broth white bean dish is an adaptation of a @justinesnacks recipe. You will LOVE this, it’s perfect comfort food! Packed with protein and nutrients from the beans and bone broth, it's also bursting with flavor thanks to fresh lemon, dill, and a touch of heat. 

Ingredients:

  • 1/4 cup olive oil
  • 1/2 small yellow onion diced finely
  • 2 cloves of garlic grated with a microplane
  • 2 small aleppo peppers or one small red bell pepper, sliced
  • 1 small fresno pepper seeds removed, sliced
  • 1 (15-ounce) can of white beans drained and rinsed
  • 2 cups of Naked bone broth (1-2 packets mixed with 2 cups of hot water)
  • 1 large lemon
  • 1 cup fresh dill finely chopped
  • Salt & pepper

Directions:

  1. Heat oil, and saute diced onion for about 4-5 minutes.
  2. Add half the bone broth (make the 2 cups in a separate bowl) and salt to taste, let simmer for 4 minutes.
  3. Once the broth has evaporated, add garlic, peppers, and cook for 1-2 minutes.
  4. Add the beans and the rest of the bone broth. Simmer for 3-4 minutes.
  5. Remove from heat and add the juice from 1 lemon, fresh dill, and pepper to taste.
