Irish Boxty with a Bone Broth Twist

Celebrate Irish tradition with some delish boxty, complete with a boost of protein and nutrition. This recipe features just a handful of everyday ingredients and our Naked bone broth. You’re going to love this Irish boxty with a bone broth twist all year round.
Instructions:
- To a bowl add, 2 cups cold mashed potatoes, 2 cups finely grated raw potatoes, 2 cups all-purpose flour (or swap 1:1 gluten free flour), 1 packet Naked bone broth, 1.5 teaspoons salt, 1 teaspoon baking soda, 1.5 to 2 cups of buttermilk (you can make your own if you prefer), plus more as needed.
- Heat a pan and add oil/ghee/butter. Form small patties and add them to your pan, pressing down on each one.
- Cook on one side until golden brown (approx 3-5 minutes each side depending on thickness and heat), then flip and repeat. Don’t rush the cooking process to ensure the grated potatoes cook through.
- Garnish with fresh dill, chives, or green onions.
- Serve warm. Sour cream is optional.
