This Ginger Beet Bone Broth Busy Day Soup is perfect for Family Day. It’s quick to make, nutritious, and requires little effort. So, you can spend more time with the family.
Ingredients:
- 2 tablespoons olive oil
- 1 yellow onion
- 3 garlic cloves, minced
- 1 tbsp fresh ginger, finely chopped
- salt and pepper, to taste
- 3 lg beets, peeled and diced
- 1 med parsnip, peeled and diced
- 4 c hot water mixed with 2 to 4 packets (depending on amount of protein you want) of Bone Brewhouse Ginger Beet instant chicken bone broth
Heat the avocado oil in a large stock pot on med high. Add the onion, cook for 3-4 mins, until softened. Add the garlic, ginger, salt and pepper and cook for an additional 1-2 mins. Add the beets, parsnips, and prepared Bone Brewhouse instant broth powder. Turn the heat to high and bring to a boil. Then reduce the heat to low, cover the pot and simmer for 25-30 minutes or until the beets are tender. Transfer to a high-powered blender. Blend for one minute or until creamy. Garnish with coconut cream or yogurt, parsley, black sesame seeds and cracked black pepper.
