Ingredients
- 6 bunches enoki mushrooms
- 2 eggs, whisked
- 1 packet Lemon Ginger instant bone broth
- Salt, to taste
- ¼ cup cornstarch or tapioca flour (plus more if needed)
- Avocado oil spray
Method

Wash and trim the mushrooms so they are roughly the same size and thickness.

Whisk the eggs in a bowl. In a separate bowl, mix the cornstarch (or tapioca flour) with the instant bone broth packet.

Dip the mushrooms into the egg mixture, then coat in the flour mixture, shaking off any excess.

Lightly spray with avocado oil and air fry at 400°F (200°C) for about 15 minutes, or until golden and crispy.
- Garnish with scallions and serve with optional dips or dressings.
