Here’s a must try Creamy Spinach Paleo Chicken recipe with bone broth. It’s delicious on its own or over sautéed cauliflower rice in bone broth to keep it low carb.
4 chicken breasts
8 slices mozzarella cheese
Salt and pepper to taste
1 tbsp olive oil
1 tbsp butter
1 clove garlic, minced
1 tbsp paleo flour your choice
½-1 cup Bone Brewhouse Naked Instant bone broth, prepared
¾ cup heavy cream
2 cups fresh spinach
2 tbsp parmesan grated
Preheat oven to 425F. Butterfly each chicken breast and fill with 2 slices of mozzarella cheese. Salt and pepper. Fold chicken breasts closed. Heat olive oil in an oven proof skillet over med high heat. Brown chicken until golden per side. Place skillet in oven and bake for 18-20 mins.
In another pan, melt butter over medium heat. Add garlic cook for 30 seconds then stir in the flour and cook for another min. Add the chicken broth while whisking until smooth. Whisk in heavy cream and stir until bubbly. Stir in the spinach and parmesan cheese until the spinach is wilted. Pour over chicken and enjoy!
