Have you discovered colcannon yet? This beloved Irish comfort food is what you NEED this St. Paddy's Day - especially with our nutrient-rich twist! Creamy mashed potatoes meet vibrant kale, green onions and collagen-rich bone broth for a dish loaded with protein, antioxidants, and potassium.
Simple, satisfying and sooo good, it's a quick and easy way to support immunity, gut health and heart health while celebrating Irish tradition. We have a feeling you'll want to make this one all year long!
Ingredients: (serves 3-4)
- 4 russet potatoes, peeled and cubed
- 5 to 6 tablespoons of unsalted butter
- Salt to taste
- 1 packet Homestyle or Naked instant bone broth
- 3 lightly packed cups of chopped kale
- 4 green onions, minced
- One cup of milk or cream
Instructions:
1. Boil potatoes until fork tender, about 15 to 20 minutes, and then drain.
2. Melt butter in a pot, add kale, and cook until wilted. Add green onions and cook for one more minute.
3. Mash the potatoes and add them to the pot with milk or cream
4. Add a knob of butter in the centre and salt to taste when serving. Happy St. Paddy's!
