Ingredients:
- 3 tbsp butter or oil
- 1 onion, chopped
- 1 pound of mushrooms (mostly cremini but adding others is fun too)
- 1½ - 2 cups water
- 1 packet Homestyle instant bone broth
- 2 tsp dried dill & paprika
- 1 tsp dried thyme & salt
- 1 tbsp soy sauce
- 3 tbsp flour
- 1 cup milk (whole milk is better)
- ¼ cup yogurt or sour cream
- ½ small lemon juiced
How to:
1. Sautée onions and mushrooms until soft.
2. Add bone broth packet, water, spices, salt and soy and bring to a boil, then reduce to a simmer and cook until the liquid reduces by about a third.
3. Whisk flour and milk together, then add to the soup and stir until it thickens.
4. Remove from stove. Add in sour cream or yogurt and lemon juice and mix.
