Dressing ingredients
- 1 cup cottage cheese
- ½ packet Homestyle bone broth
- ⅛ cup olive oil
- 1 jalapeño (seeds removed for less heat or leave a few for heat)
- 1 cup fresh basil (packed)
- 1-2 small garlic cloves
- ½ - 1 lime juiced
- water (to thin, as needed)
- Salt + pepper to taste
Salad ingredients
Romaine lettuce, grilled chicken, avocado, cherry tomatoes, corn, cucumber, pumpkin seeds, pickled red onions + crushed pita chips
Method
Blend everything until smooth + creamy. Start with less water and add more until you get your perfect consistency. Let it sit for 5–10 minutes for the best flavor. Assemble salad (ingredients listed above) and toss or pour over salad.
