Ingredients
- 1 block extra-firm tofu, cubed (air-fried with soy sauce or coconut aminos and coconut or olive oil before starting the sauce)
- 1 packet Thai Coconut instant bone broth
- 1 tbsp oil
- 4 cloves garlic, minced
- 1 tbsp fresh ginger, chopped
- 380 g coconut milk (about 1 can, full-fat for a richer sauce)
- 2 tsp garlic powder
- 1 tsp paprika
- 1 tsp parsley
- ½ tsp salt and pepper
- Juice of 1 lime
- 1 tbsp soy sauce or coconut aminos
- Cooked rice, for serving (about 2 portions)
- Fresh cilantro, for garnish
Method
- Heat the oil in a pan over medium heat and sauté the garlic and ginger for 1–2 minutes, until fragrant.
- Add the coconut milk, instant bone broth, garlic powder, paprika, parsley, soy sauce or coconut aminos, salt, and pepper. Bring to a gentle simmer.

Stir in the cooked tofu cubes and lime juice, and let simmer for about 5 minutes.
- To serve, add rice to a bowl, top with the tofu and extra sauce, and garnish with fresh cilantro.
